Poke Sallet

Poke Sallet, aka Poke Salad, aka Poke, aka Pokeweed is a perennial native to the eastern United States.

Poke Sallet is a toxic plant, but some eat it much like any other green, after boiling it several times.

It's seasoned with fat back or bacon grease, of course.

During the Civil War, many letters were written with a quill and the ink from this plant.

This fine specimen is found in my flowerbed in Travelers Rest.
